Ingredients

  • 2 cups powdered sugar
  • 3½ cups Rice Krispies cereal

  • 20 ounces chocolate melting wafers (or semi-sweet chocolate chips)

Instructions

  1. Prepare the Peanut Butter Mixture: In a large bowl, beat together peanut butter, salted butter, and vanilla extract until fully combined.
  2. Add the Powdered Sugar: Gradually add powdered sugar (½ cup at a time), mixing a little between each addition to prevent the sugar from making a mess.
  3. Fold in the Rice Krispies: Gently fold in Rice Krispies cereal until evenly combined.
  4. Form the Balls: Using a medium cookie scoop, portion the mixture out onto a parchment-lined baking sheet. Roll the portions between your hands to smooth them out and shape them into balls.
  5. Melt the Chocolate: Melt the chocolate melting wafers in a deep, wide-mouth cup or bowl at 30-second intervals, stirring between each one until fully melted and smooth.
  6. Dip the Peanut Butter Balls: Dip each ball into the melted chocolate, one at a time. Let any excess chocolate drip off before placing the dipped balls back onto the parchment-lined sheet. If the chocolate starts to cool and thicken, reheat it in 30-second intervals.
  7. Let the Chocolate Harden: Allow the peanut butter balls to sit at room temperature to harden, or pop them in the fridge for 15 minutes to speed up the process.
