Ingredients
- For the Crust and Topping:
- 3 cups all-purpose flour
- 1 ½ cups sugar
- ¼ teaspoon salt
- 1 ½ cups unsalted butter, chilled
- For the Filling:
- 4 large eggs
- 2 cups sugar
- 1 cup sour cream
- ¾ cup all-purpose flour
- Pinch of salt
- 2 pounds peaches, pitted and thinly sliced
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan with cooking spray and set aside.
- Make the Crust and Topping: In a mixer bowl, combine the flour, sugar, and salt. Mix with the paddle attachment until combined. Cut the butter into small pieces and add gradually, mixing until crumbly. Alternatively, use a pastry cutter or fork to do this by hand. Set aside 1 ½ cups of the crumbly mixture for the topping. Press the remaining mixture into the prepared pan. Bake for 12–15 minutes, until golden brown. Let it cool for at least 10 minutes.
- Make the Filling: In a large bowl, whisk the eggs and sugar. Add the sour cream, flour, and salt, mixing well. Gently fold in the sliced peaches. Pour the peach mixture over the cooled crust.
- Sprinkle the reserved crumb mixture over the peach filling.
- Bake for 45–50 minutes, or until the top is lightly browned and the filling is set.
- Let the bars cool for at least 1 hour before cutting. For best results, refrigerate for a couple of hours before slicing.
- Store in the refrigerator.
Notes
- You can substitute fresh peaches with canned or frozen peaches, but make sure to drain and pat them dry.
