Description

These Parmesan Zucchini Spears are a delicious and healthier alternative to traditional fries. Coated in Parmesan cheese and Italian seasoning, they’re baked to perfection and make a perfect appetizer or side dish.


Ingredients

  • 34 zucchini
  • ½ cup grated Parmesan cheese
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C). Place a cooling rack on a baking sheet and spray it with nonstick spray. Set aside.
  2. Slice the zucchini in half lengthwise, then cut each half into quarters (or sixths if the zucchini is large).
  3. In a small bowl, combine the grated Parmesan, Italian seasoning, salt, and pepper.
  4. Place the zucchini spears in a bowl, add the olive oil, and toss to coat evenly.
  5. Arrange the zucchini spears on the prepared baking sheet. Sprinkle them with the Parmesan mixture.
  6. Bake the zucchini for about 15 minutes, until tender. Then, turn the oven to broil for 2 to 3 minutes until the top turns golden brown.
