These Parmesan Zucchini Spears are a delicious and healthier alternative to traditional fries. Coated in Parmesan cheese and Italian seasoning, they’re baked to perfection and make a perfect appetizer or side dish.
Ingredients
- 3–4 zucchini
- ½ cup grated Parmesan cheese
- 1 ½ teaspoons Italian seasoning
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C). Place a cooling rack on a baking sheet and spray it with nonstick spray. Set aside.
- Slice the zucchini in half lengthwise, then cut each half into quarters (or sixths if the zucchini is large).
- In a small bowl, combine the grated Parmesan, Italian seasoning, salt, and pepper.
- Place the zucchini spears in a bowl, add the olive oil, and toss to coat evenly.
- Arrange the zucchini spears on the prepared baking sheet. Sprinkle them with the Parmesan mixture.
- Bake the zucchini for about 15 minutes, until tender. Then, turn the oven to broil for 2 to 3 minutes until the top turns golden brown.
Notes
- For extra crispiness, you can sprinkle a little extra Parmesan on top before broiling.
- These zucchini spears can be served with a side of marinara sauce or ranch for dipping.
- If you prefer a milder flavor, you can reduce the amount of Italian seasoning.
