Description

A delicious and easy Parmesan Crusted Chicken Sheet Pan Dinner featuring juicy chicken breasts with a crispy parmesan and breadcrumb crust, roasted red potatoes, and tender green beans, all cooked together on a single sheet pan for a hassle-free and flavorful meal.

Ingredients

Chicken

  • lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain, with optional 1 tsp Italian seasoning if plain)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Red Potatoes

  • 2 lb red potatoes, cut into bite sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1-2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to prepare for roasting all components evenly.
  2. Prepare and Roast Potatoes: Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup. In a medium bowl, toss together the red potatoes, minced garlic, olive oil, parmesan, salt, and pepper until well coated. Spread the potatoes evenly on one third of the sheet pan and roast for 10-15 minutes, depending on preferred potato browning.
  3. Coat the Chicken and Add to Pan: While the potatoes roast, toss the chicken breasts in the same bowl with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt until evenly coated. Remove the pan with the partially cooked potatoes from the oven, add the coated chicken breasts to the pan.
  4. Prepare Green Beans and Add to Pan: Toss the green beans with olive oil, minced garlic, parmesan (if using), salt, and pepper. Add the green beans to the sheet pan alongside the potatoes and chicken.
  5. Roast Everything Together: Return the sheet pan to the oven and roast for about 25 minutes or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  6. Optional Crisping: For extra crispy potatoes, switch the oven to broil on high for an additional 4-5 minutes after roasting, watching carefully to avoid burning.
  7. Serve: Remove the sheet pan from the oven, allow to cool for several minutes, then serve your perfectly roasted parmesan crusted chicken with potatoes and green beans. Enjoy!

Notes

  • Use Italian seasoned breadcrumbs or add 1 tsp Italian seasoning to plain breadcrumbs for extra flavor in the chicken crust.
  • Adjust the roasting time of the potatoes depending on size and your preferred crispiness.
  • Check the chicken’s internal temperature with a meat thermometer to ensure it reaches 165°F for safety.
  • Broiling at the end adds extra crispiness but keep a close eye to prevent burning.
  • You can swap green beans for other quick-roasting vegetables like asparagus or broccoli if desired.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven for best texture.
