Ingredients
- 5 cups cherry tomatoes, halved
- 4 garlic cloves, minced
- 2 tablespoons olive oil (plus more for storage)
- 2 teaspoons dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon granulated sugar (optional)
Instructions

- In a large mixing bowl, gently toss together the halved cherry tomatoes, minced garlic, olive oil, Italian seasoning, salt, pepper, and sugar if using.
- Spread the mixture evenly onto a baking sheet lined with aluminum foil or parchment paper.
- Roast for 1 hour, or until tomatoes are tender, slightly caramelized, and bursting with flavor.
- Use immediately or store in an airtight container with a bit of olive oil in the refrigerator.
Notes
- For deeper flavor, roast slightly longer until tomatoes begin to shrivel and caramelize more.
- Great for meal prep—store for up to 1 week in the fridge.
- Use a mix of cherry and grape tomatoes for color variation.
- Add fresh basil or thyme after roasting for extra freshness.
