Description

Cheesymite Scrolls are soft, fluffy rolls filled with a savory Vegemite and cheese filling, perfect for breakfast or a delicious snack.


Ingredients

  • For the Dough:
  • 4 cups bread flour (or plain/all-purpose flour)
  • 3 tsp instant yeast (rapid-rise yeast)
  • 2 tsp white sugar
  • 1 ¼ tsp cooking salt (kosher salt) (halve for table salt)
  • 1 ½ cups + 2 tbsp warm milk (full or low fat)
  • For Vegemite & Cheese Filling:
  • 50g (3 tbsp) salted butter, softened
  • 3 tbsp Vegemite
  • 5 cups (500g) freshly shredded Colby cheese (or cheddar, Monterey Jack)

Instructions

  1. Prepare the Dough: In the bowl of a stand mixer, combine flour, yeast, sugar, and salt. Add the warm milk and mix on low speed until there is no visible dry flour. Beat on medium speed for 5 minutes until smooth.
  2. First Rise: Shape the dough into a ball and place it back in the bowl. Cover with cling wrap and let it rise in a warm place for 1 ½ hours or until doubled in size.
  3. Roll Out the Dough: Punch the dough down and turn it out onto a lightly floured surface. Shape it into a rectangle and roll it out to 48 x 28 cm (11 x 19 inches).
  4. Spread the Filling: Spread softened butter over the dough, then spread Vegemite evenly. Sprinkle 3 cups (300g) of shredded cheese over the entire surface.
  5. Cut into Scrolls: Roll the dough up into a log and cut it into 12 even pieces. Grease a 23 x 33 cm (9 x 13 inches) baking pan and line it with parchment paper with overhang.
  6. Second Rise: Place the scrolls into the pan, leaving space between each. Cover with lightly oiled cling wrap and let them rise for about 30 minutes, or until they expand by 30-50%.
  7. Bake: Preheat the oven to 180°C (350°F) (160°C fan-forced). Top the scrolls with the remaining cheese. Bake for 25 minutes, then rotate the pan and bake for another 10 minutes at 200°C (375°F) (180°C fan-forced), until golden.
  8. Cool and Serve: Let the scrolls rest in the pan for 5 minutes. Use the parchment paper overhang to lift the scrolls out and cool on a rack for another 5 minutes. Peel apart the scrolls and serve warm.
