Description

This One Pot beef Smoked Sausage Pasta is a creamy, savory dish made with smoked beef sausage, pasta, and cheddar cheese, all simmered together in one pot for easy cleanup. Perfect for a weeknight dinner, this beginner-friendly recipe is quick, delicious, and full of flavor!

Ingredients

  • 3 tablespoons olive oil
  • 2 pounds smoked beef sausage, sliced into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 12 ounces diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 teaspoon pepper
  • 8 ounces dry whole wheat bow tie pasta
  • 2 cups shredded cheddar cheese

Instructions

  1. Slice the smoked beef sausage into bite-sized pieces. Heat olive oil in a large pot or Dutch oven over medium heat. Add the sausage and chopped onions, cooking until the onions soften and the sausage is browned.
  2. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the chicken broth, diced tomatoes (with juice), heavy cream, and pepper. Stir well to combine.
  4. Add the dry pasta to the pot, ensuring it’s fully submerged in the sauce. Cover the pot and simmer for 15-20 minutes, stirring occasionally to prevent the pasta from sticking. Continue simmering until the pasta is tender and most of the liquid is absorbed.
  5. Remove the pot from heat and stir in 1 cup of shredded cheddar cheese until melted and creamy.
  6. Serve immediately with additional shredded cheddar cheese if desired.

Notes

  • Stir the pasta occasionally while it simmers to ensure even cooking and prevent sticking.
  • For extra flavor, top with fresh herbs like parsley or thyme.
  • You can also swap the sausage for a different protein, like chicken or turkey sausage, if desired.
