Instructions

  2. Cook the chicken sausage: Add the 12 oz package of mild Italian chicken sausage pieces to the skillet. Sauté for 5 to 6 minutes, stirring occasionally, until the sausage is golden brown and cooked through.
  3. Toast the orzo: Add 2 cups dry orzo to the pan. Toss and stir for 1 minute to lightly toast the orzo, enhancing its flavor.
  4. Add liquids and seasonings: Pour in 4 cups chicken broth, ½ cup canned full fat coconut milk, ¼ teaspoon sea salt, ¼ teaspoon black pepper, and 1 teaspoon Italian seasoning. Stir to combine and bring the mixture to a boil.
  5. Simmer the orzo: Once boiling, cover the skillet and reduce the heat to low. Let it simmer gently for 10 to 12 minutes, or until the orzo is tender and most of the liquid has been absorbed.
  6. Add spinach and Parmesan: Stir in 5 oz baby spinach and ½ cup freshly grated Parmesan cheese. Mix thoroughly until the spinach wilts and the cheese melts into the dish, creating a creamy texture.
  7. Serve: Serve hot, garnished with extra Parmesan cheese, fresh basil leaves, and crushed red pepper flakes if desired for a bit of heat.
