Wet Ingredients

  • 2 medium eggs
  • 1¼ cups water or milk


Instructions

  1. Prepare Oat Flour: Place the oats into a powerful blender and blend until they form a fine flour. Alternatively, you can use pre-packaged oat flour.
  2. Mix Ingredients: Add the salt, optional sugar, eggs, and water or milk to the oat flour in the blender. Blend everything until the batter is smooth and free of lumps.
  3. Heat Pan: Place a small non-stick pan over low-medium heat and allow it to heat up properly for even cooking.
  4. Cook Crepes: Pour about 1/4 cup of batter into the hot pan, immediately spreading it evenly to create a thin layer. Cook the crepe for 1 minute, then flip it carefully and cook for another 30 seconds until light golden.
