Ingredients
- 2 1/2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 1/4 cups heavy cream
- 1/4 cup + 1 tablespoon lemon juice
- 1-2 drops yellow food coloring (optional)
- 1 cup lemon curd (optional)
- 1 1/2 cups graham cracker crumbs
- 1/3 cup white sugar
- 1/3 cup unsalted butter, melted
Instructions
- In a bowl, combine graham cracker crumbs, white sugar, and melted butter. Mix until evenly combined.
- Press the crust mixture into a 9-inch pie dish and refrigerate while preparing the filling.
- In a mixing bowl, add softened cream cheese and powdered sugar. Beat until smooth.
- Add heavy cream, lemon juice, and food coloring (if using) to the cream cheese mixture. Beat until smooth and thick.
- Transfer the cheesecake filling into the prepared crust and smooth the top.
- Refrigerate the cheesecake overnight to set.
- Before serving, optionally top with a thick layer of lemon curd.
