Description

A quick and flavorful stir-fry made with tender chicken thighs, caramelized onions, and a sweet-spicy soy sauce, ready in just 30 minutes—perfect over rice for an easy weeknight meal.


Ingredients

  • Chicken:
  • pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • ⅓ cup cornstarch
  • ¼ cup vegetable or canola oil, divided
  • 1 large onion, cut into chunks
  • 4 garlic cloves, minced
  • Sauce:
  • ½ cup soy sauce
  • ½ teaspoon ground ginger
  • 1 tablespoon rice vinegar
  • ½ cup brown sugar
  • 1 tablespoon cornstarch
  • ½ cup water
  • ½ teaspoon red pepper flakes
  • 45 green onions, sliced

Instructions

  1. Coat Chicken: In a large bowl, toss chicken pieces with cornstarch until fully coated.
  2. Cook Chicken: Heat a large 12-inch skillet or wok over high heat and add 3 tablespoons of oil. Cook half of the chicken until golden brown, about 4–5 minutes, flipping halfway. Remove to a plate and repeat with the remaining chicken.
  3. Sauté Onion: Add onion chunks to the skillet and cook for 2–3 minutes, just until softened. Transfer to the plate with chicken.
  4. Sauté Garlic: Add remaining 1 tablespoon oil and sauté garlic for about 30 seconds, just until fragrant.
  5. Make Sauce: In a small bowl, whisk together soy sauce, ginger, vinegar, brown sugar, and red pepper flakes. In another bowl, mix cornstarch with water until dissolved, then stir into the sauce.
  6. Simmer Sauce: Pour the sauce into the skillet and bring to a simmer, stirring frequently until slightly thickened, about 2–3 minutes.
  7. Combine: Return chicken and onions to the skillet along with green onions. Stir to coat in the sauce and heat through.
  8. Serve: Taste and season with salt and pepper if needed. Serve hot over steamed white rice.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • Swap chicken thighs for chicken breast if preferred.
  • This recipe works well with added veggies like bell peppers or snap peas.
