Description

Mint chocolate chip fudge is a rich and creamy treat that blends the refreshing flavor of mint with sweet white chocolate and semi-sweet mini chocolate chips. Inspired by the classic ice cream flavor, this easy no-bake dessert is perfect for the holidays or any time you’re craving something minty and sweet.


Ingredients

  • 2 cups white chocolate chips
  • 1 cup sweetened condensed milk
  • 1/2 to 1 teaspoon peppermint extract (or 1 1/2 teaspoons mint extract)
  • 1/2 teaspoon vanilla extract
  • 2 to 3 drops gel-based green food coloring
  • 1/2 cup mini semi-sweet chocolate chips (divided)


Instructions

  1. Line a loaf pan with parchment paper and set aside.
  2. Place the mini chocolate chips in the freezer to chill while preparing the fudge base.
  3. In a microwave-safe bowl, combine white chocolate chips and sweetened condensed milk. Microwave for 30 seconds at a time, stirring in between, for a total of 1 1/2 minutes.
  4. Stir the mixture until the white chocolate is completely melted and smooth.
  5. Add peppermint extract, vanilla extract, and green food coloring. Stir until the color is uniform.
  6. Set the fudge mixture aside and stir every 5 minutes until it reaches room temperature (about 20 minutes). It may crust on top, but will smooth out with stirring.
  7. When the mixture is completely cool, fold in most of the chilled mini chocolate chips, reserving a couple tablespoons for topping.
  8. Quickly transfer the mixture into the prepared loaf pan and sprinkle the reserved chips on top.
  9. Refrigerate for at least 2 hours, or until firm.
  10. Lift the fudge out of the pan using the parchment paper. Cut into pieces and serve.

Notes

  • Use gel-based food coloring for vibrant green color without altering the texture.
  • Make sure the fudge base is completely cool before adding chocolate chips to prevent melting.
  • Store in an airtight container in the refrigerator for up to one week.
