Description

This Mexican Tater Tot Casserole combines the bold flavors of taco seasoning, ground beef, and cheesy goodness with crispy tater tots for an easy, crowd-pleasing meal.


Ingredients

  • 1 pound ground beef
  • 1 cup onion, diced
  • 1 packet taco seasoning (or 3 tablespoons homemade)
  • 1 (4-ounce) can green chiles
  • 1 (15.5-ounce) can black beans, drained and rinsed
  • 1 ½ cups frozen corn
  • 1 ½ cups red enchilada sauce
  • 1 cup thick salsa
  • 3 cups shredded cheese, divided
  • 4 cups frozen tater tots

Instructions

  1. Preheat the oven to 375°F (190°C). If you don’t have a 12-inch oven-safe skillet, spray a 9×13-inch baking dish with cooking spray.
  2. Heat a large 12-inch skillet over medium-high heat. Add the ground beef and diced onion. Cook until the beef is browned, then drain any excess fat.
  3. Stir in the taco seasoning, green chiles, black beans, corn, salsa, and enchilada sauce. Mix until combined.
  4. Stir in 2 cups of the shredded cheese and mix again.
  5. Place the frozen tater tots on top of the meat mixture and bake for 35-40 minutes, or until the tater tots are golden and crispy.
  6. Remove the casserole from the oven and sprinkle the remaining cheese over the tater tots. Return to the oven for another 5 minutes, or until the cheese is melted.
  7. Garnish with your favorite taco toppings and serve hot.

Notes

  • Feel free to add additional taco toppings like sour cream, guacamole, or fresh cilantro for extra flavor.
  • If you don’t have an oven-safe skillet, a baking dish works just as well.
  • For extra spice, consider adding jalapeños or a spicier salsa.
