Description
This Mexican Tater Tot Casserole combines the bold flavors of taco seasoning, ground beef, and cheesy goodness with crispy tater tots for an easy, crowd-pleasing meal.
Ingredients
- 1 pound ground beef
- 1 cup onion, diced
- 1 packet taco seasoning (or 3 tablespoons homemade)
- 1 (4-ounce) can green chiles
- 1 (15.5-ounce) can black beans, drained and rinsed
- 1 ½ cups frozen corn
- 1 ½ cups red enchilada sauce
- 1 cup thick salsa
- 3 cups shredded cheese, divided
- 4 cups frozen tater tots
Instructions
- Preheat the oven to 375°F (190°C). If you don’t have a 12-inch oven-safe skillet, spray a 9×13-inch baking dish with cooking spray.
- Heat a large 12-inch skillet over medium-high heat. Add the ground beef and diced onion. Cook until the beef is browned, then drain any excess fat.
- Stir in the taco seasoning, green chiles, black beans, corn, salsa, and enchilada sauce. Mix until combined.
- Stir in 2 cups of the shredded cheese and mix again.
- Place the frozen tater tots on top of the meat mixture and bake for 35-40 minutes, or until the tater tots are golden and crispy.
- Remove the casserole from the oven and sprinkle the remaining cheese over the tater tots. Return to the oven for another 5 minutes, or until the cheese is melted.
- Garnish with your favorite taco toppings and serve hot.
Notes
- Feel free to add additional taco toppings like sour cream, guacamole, or fresh cilantro for extra flavor.
- If you don’t have an oven-safe skillet, a baking dish works just as well.
- For extra spice, consider adding jalapeños or a spicier salsa.
