These Mediterranean Sun-Dried Tomato Chicken Meatballs are packed with flavor from the sun-dried tomatoes, garlic, and fresh basil. They’re perfect for any occasion, whether as a snack, appetizer, or a main course, and they come together in just 30 minutes!

Ingredients

  • Main Ingredients:
  • 2 large chicken breasts, cut into pieces
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh basil leaves
  • 1/4 cup seasoned breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C). Grease a baking sheet and set aside.
  2. Prepare Chicken: Cut the chicken breasts into smaller pieces to make them easier to process.
  3. Mix Ingredients: Add the chicken, egg, garlic, sun-dried tomatoes, basil, breadcrumbs, and seasonings to the bowl of a food processor. Pulse until well combined and uniform.
  4. Form Meatballs: Divide the mixture evenly and roll each portion into balls using your palms.
  5. Bake: Arrange the meatballs on the prepared baking sheet. Bake for 20 minutes, or until golden brown and the internal temperature reaches 165°F (75°C).
  6. Serve: Let the meatballs cool slightly before serving.

Notes

  • Add Cheese: Add crumbled feta cheese or mozzarella to the meatball mixture for an extra cheesy twist.
  • Make Them Spicy: Add a pinch of red pepper flakes for a little heat.
  • Gluten-Free: Use gluten-free breadcrumbs for a gluten-free version.
