Ingredients
- For the Mashed Sweet Potatoes:

Instructions
- Preheat Oven: Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper.
- Bake Sweet Potatoes: Prick the sweet potatoes 5 or 6 times with a fork or paring knife. Arrange them on the prepared baking sheet. Bake for 50 minutes to 1 hour, depending on the size of the sweet potatoes, until they are very soft with juices beginning to caramelize on the baking sheet.
- Cool and Mash Sweet Potatoes: Remove the sweet potatoes from the oven and let them cool until you can handle them. Carefully remove the skins and place the flesh in a large bowl. Mash with a potato masher or fork until smooth.
- Prepare Caramelized Pineapple: In a blender, puree the diced pineapple with its juice until smooth. Transfer the mixture to a large saucepan or Dutch oven. Add the dark brown sugar and bring to a simmer over medium heat. Attach a candy thermometer to the pan and simmer until the mixture thickens, caramelizes, and reaches 210°F, about 12-15 minutes.
- Combine Sweet Potatoes and Pineapple: Add the mashed sweet potatoes to the caramelized pineapple mixture along with the kosher salt. Mix thoroughly with a sturdy whisk and cook for another 5-6 minutes, stirring occasionally, until you have a rich, smooth puree.
- Toast the Nuts: In a small skillet over medium-low heat, toast the pine nuts or slivered almonds for 2-3 minutes, stirring constantly, until lightly browned and fragrant. Immediately remove from heat.
- Serve: Transfer the sweet potato mixture to a serving bowl, garnish with the toasted pine nuts or slivered almonds, and enjoy!
