Ingredients
- For the Roasted Strawberries:
- 2 cups strawberries, quartered
- 2 tablespoons granulated sugar

- For the Mascarpone Mousse:
- 8 ounces mascarpone cheese, softened
- 3 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 3/4 cup heavy whipping cream
Instructions
- Roast the Strawberries: Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish. Add the strawberries, sprinkle with sugar, and drizzle with vanilla extract. Toss gently and spread in a single layer. Roast for 20–25 minutes until tender and juicy. Let cool slightly.
- Make the Mousse: In a large bowl, beat together the mascarpone, cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Assemble: Spoon or pipe the mousse into 6 dessert cups or glasses. Top with the warm or cooled roasted strawberries. Serve immediately or refrigerate until ready to enjoy.
