Paired with perfectly cooked ramen noodles and fresh toppings like coriander, beansprouts, edamame beans, and spring onions, this dish is both hearty and satisfying, perfect for a cozy meal.


Ingredients

Chicken and Sauce

  • 2 tablespoon olive oil
  • 2 chicken breasts
  • 50g all purpose flour
  • 3 garlic cloves, minced
  • 8 sun-dried tomatoes, sliced
  • ½ tablespoon smoked paprika
  • ½ tablespoon oregano
  • ½ tablespoon chilli flakes
  • 600ml chicken stock (divided into 2 x 300ml)
  • 300ml single cream
  • 2 tablespoon grated parmesan, plus extra for garnish
  • ½ teaspoon ground pepper
  • ½ teaspoon flaky salt
  • ½ teaspoon sugar
  • 200g ramen noodles

  • Beansprouts
  • Edamame beans
  • Spring onion
  • Chilli oil


Instructions

  1. Coat and Fry Chicken: Pour the all-purpose flour onto a plate. Coat the chicken breasts in the flour evenly. Heat 2 tablespoons of olive oil in a saucepan over medium heat. Fry the chicken breasts for 4 minutes on each side or until golden brown. Remove the chicken from the pan and set aside.
  2. Prepare the Sauce: In the same saucepan, add minced garlic, sliced sun-dried tomatoes, smoked paprika, chilli flakes, and oregano. Sauté for a couple of minutes until fragrant. Then pour in 300ml of chicken stock and the single cream, stirring to combine. Grate in the parmesan cheese and mix well.
  3. Simmer Chicken in Sauce: Return the chicken breasts to the saucepan, cover with a lid, and cook for 5 minutes on medium-low heat to absorb flavors and fully cook the chicken. Remove the chicken breasts again and set aside to slice.
  4. Season and Cook Noodles: Season the broth with flaky salt, ground pepper, and ½ teaspoon sugar to taste. Add the remaining 300ml chicken stock and bring to a gentle boil. Add ramen noodles to the broth and cook according to packet instructions, stirring frequently to prevent sticking.
  5. Assemble the Dish: Once noodles are cooked, ladle the broth and noodles into two serving bowls. Slice the chicken breasts and arrange on top. Garnish with coriander, beansprouts, edamame beans, spring onions, and a drizzle of chilli oil for extra flavor and texture.

Notes

  • Use single cream for a rich and creamy broth, but you can substitute with half-and-half or coconut cream for dietary needs.
  • Adjust chilli flakes and chilli oil to control the heat level to your preference.
  • Fresh toppings add a nice crunch and freshness but can be customized based on what you have available.
