Description

Ingredients

  • 3 medium cucumbers, peeled and sliced
  • 1 medium onion, sliced into rings
  • 3 medium tomatoes, cut into wedges
  • ½ cup vinegar
  • ¼ cup sugar
  • 1 cup water
  • 2 tsp salt
  • 1 tsp black pepper
  • ¼ cup oil
  • 1 tsp chopped fresh mint (optional)

Instructions

  1. Prepare the Vegetables: Thinly slice the cucumbers and onions. Cut the tomatoes into wedges. Place all the vegetables in a large bowl.
  2. Make the Marinade: In a separate bowl, whisk together vinegar, sugar, water, salt, pepper, and oil until the sugar dissolves.
