Description

These sweet and tender maple-scented scones are a healthier, keto-friendly version of your favorite Starbucks treat! Enjoy a guilt-free indulgence with the perfect balance of flavors and textures.


Ingredients

  • For the Scones:
  • 2 cups (220 g) almond flour
  • ¼ cup (45.5 g) Swerve Sweetener
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup (54.5 g) chopped pecans, toasted
  • 1 large egg
  • ¼ cup (56.75 g) butter, melted
  • 2 tbsp heavy cream
  • 1 tsp maple extract
  • For the Glaze:
  • 6 tbsp powdered Swerve Sweetener
  • 2 tbsp heavy cream
  • 1 tsp maple extract
  • Water, if needed

Instructions

  1. For the Scones: Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone mat, and lightly dust with almond flour.
  2. In a large bowl, whisk together the almond flour, Swerve Sweetener, baking powder, and salt. Stir in the toasted pecans.
  3. Add the egg, melted butter, heavy cream, and maple extract. Stir until the dough comes together.
  4. Transfer the dough to the prepared baking sheet. Shape it into a circle about 7–8 inches in diameter. Slice the dough into 8 even wedges and separate them carefully, spacing them evenly around the sheet.
  5. Bake for 18 to 25 minutes, or until the scones are firm and lightly browned. Let them cool on the pan.
  6. For the Glaze: In a small bowl, whisk together the powdered Swerve Sweetener, maple extract, and heavy cream until smooth.
  7. Add a little water if you want to thin the glaze. Drizzle or spread the glaze over the cooled scones and let it set.

Notes

  • For a more decadent treat, add extra toasted pecans on top of the glaze.
  • Store leftover scones in an airtight container for up to 3 days.
  • If you prefer, you can use regular powdered sugar instead of Swerve Sweetener, but this will no longer be keto-friendly.
