- 1 cup (125g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 2 Tablespoons (28g) unsalted butter, melted and slightly cooled
- 1 large egg, at room temperature
- 1/3 cup (65g) packed light brown sugar
- 1/4 cup (60ml) milk, at room temperature
- 1/4 cup (60g) yogurt or sour cream, at room temperature
- 1 teaspoon pure vanilla extract
Maple Icing
- 2 Tablespoons (28g) unsalted butter
- 1/3 cup (80ml) pure maple syrup
- 1 cup (112g) sifted confectioners’ sugar
- 1/4 teaspoon maple extract (optional, but recommended)
- Pinch of salt, to taste
Instructions
- Preheat and Prepare Donut Pan: Preheat your oven to 350°F (177°C). Spray a donut pan with non-stick spray and set it aside to ensure the donuts don’t stick during baking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt until well combined. This forms the spiced base of the donuts.
- Combine Wet Ingredients: In another bowl, whisk the melted butter, egg, light brown sugar, milk, yogurt (or sour cream), and vanilla extract until fully blended and smooth.
- Mix Batter: Pour the wet ingredients into the bowl with dry ingredients and whisk gently until just combined. Be careful not to overmix; the batter will be thick but should be uniform without lumps.
- Fill Donut Pan: Using a large zip-top bag, spoon the batter into the bag and cut a corner off to pipe the batter easily. Fill each donut cavity about halfway with batter. If you only have one donut pan, keep remaining batter at room temperature while baking in batches.
- Bake Donuts: Bake the donuts in the preheated oven for 10-11 minutes or until the tops and edges turn lightly browned. Test doneness by gently pressing a donut; it should spring back. Allow donuts to cool briefly in the pan.
- Transfer to Cooling Rack: Carefully remove the donuts from the pan and place them on a wire rack set over parchment paper to cool completely. Bake remaining batter as needed.
- Prepare Maple Icing: In a small saucepan over low heat, melt the butter and maple syrup together, stirring occasionally. Once melted, remove from heat and whisk in sifted confectioners’ sugar, maple extract, and a pinch of salt to taste. Allow the icing to cool for 2-3 minutes to thicken slightly.
- Glaze Donuts: Dip each cooled donut into the maple icing to coat the top. As the icing thickens quickly, reheat gently if needed while dipping. Place the glazed donuts back on the cooling rack to let excess icing drip off. For extra indulgence, double dip the donuts.
- Serve and Store: Donuts are best enjoyed immediately for optimal texture and flavor. Store leftovers covered tightly at room temperature or in the refrigerator for up to 2 days.
