Ingredients

Filling

  • 2 1/2 cups ripe mangoes, cut into small chunks (about 2-3 mangoes)
  • 3-5 tablespoons granulated sugar (adjust based on mango sweetness)
  • 1/2 tablespoon corn starch

Crumb Pastry

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup cold unsalted butter, cut into chunks
  • 2/3 cup brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla paste


Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the bars.
  2. Prepare Mango Filling: Cut the ripe mangoes into small chunks and place them in a bowl. Add 3 to 5 tablespoons of granulated sugar depending on mango sweetness, along with 1/2 tablespoon of corn starch. Mix thoroughly to combine and set aside, allowing the mixture to thicken slightly.
  3. Mix Dry Ingredients: In a large bowl, sift together 2 cups of flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  4. Add Butter to Dry Mix: Cut cold unsalted butter into small chunks and add to the flour mixture. Using a food processor, pulse until small crumbs form, or use a pastry cutter to cut the butter into the flour until you achieve a coarse crumbly texture.
  5. Combine Wet Ingredients: In a separate bowl, whisk together 2/3 cup brown sugar, 1 large egg, and 1/2 teaspoon vanilla paste.
  6. Mix Wet and Dry Ingredients: Pour the wet ingredient mixture into the buttery dry crumb mixture. Stir gently until well combined, with the mixture still slightly crumbly.
  7. Form Base Layer: Line an 8″ x 8″ baking pan with parchment paper. Take about two-thirds of the crumb mixture and press it evenly into the bottom of the pan to form a firm pastry base.
  8. Add Mango Layer: Spread the prepared mango filling evenly over the crust layer in the baking pan.
  9. Top with Crumbs: Sprinkle the remaining one-third of the crumb mixture evenly over the mango layer, covering it fully.
  10. Bake: Place the pan in the preheated oven and bake for 35 to 40 minutes, or until the top is golden and set.
  11. Cool and Slice: Remove from oven and allow to cool in the pan for 5 to 10 minutes. Then lift the bars out of the pan using the parchment paper and let them cool further on a wire rack for another 15 to 20 minutes.
