Description

Ingredients

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk (or substitute with whole milk and 1 tablespoon lemon juice or vinegar)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract (optional)
  • 21 oz can of lemon pie filling or homemade lemon curd

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Place the stick of butter in a 9×9-inch baking dish and put the dish in the oven to melt the butter while the oven heats up (about 3-4 minutes).
  2. Prepare the Batter: In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and sugar. Add the wet ingredients: buttermilk, vanilla extract, and lemon extract (if using). Stir until smooth and well-combined.
  3. Assemble the Cobbler: Carefully pour the batter evenly over the melted butter in the baking dish. Do not stir—this will create the golden, crispy crust as it bakes.
  4. Add Lemon Filling: Spoon the lemon pie filling or lemon curd evenly over the batter. As it bakes, the lemon filling will float on top but sink into the batter—this is the ‘magic’!
  5. Bake the Cobbler: Bake for 45-55 minutes, or until golden brown around the edges, puffed up, and set in the center. A toothpick inserted into the middle should come out clean or with a few moist crumbs.
  6. Cool & Serve: Let the cobbler cool for 10-15 minutes to help the filling firm up. Serve warm with whipped cream, ice cream, a dusting of powdered sugar, or fresh lemon slices for garnish.
