Ingredients
- 1/2 cup unsalted butter (1 stick)
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 cup buttermilk (or substitute with whole milk and 1 tablespoon lemon juice or vinegar)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract (optional)
- 21 oz can of lemon pie filling or homemade lemon curd
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Place the stick of butter in a 9×9-inch baking dish and put the dish in the oven to melt the butter while the oven heats up (about 3-4 minutes).
- Prepare the Batter: In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and sugar. Add the wet ingredients: buttermilk, vanilla extract, and lemon extract (if using). Stir until smooth and well-combined.
- Assemble the Cobbler: Carefully pour the batter evenly over the melted butter in the baking dish. Do not stir—this will create the golden, crispy crust as it bakes.
- Add Lemon Filling: Spoon the lemon pie filling or lemon curd evenly over the batter. As it bakes, the lemon filling will float on top but sink into the batter—this is the ‘magic’!
- Bake the Cobbler: Bake for 45-55 minutes, or until golden brown around the edges, puffed up, and set in the center. A toothpick inserted into the middle should come out clean or with a few moist crumbs.
- Cool & Serve: Let the cobbler cool for 10-15 minutes to help the filling firm up. Serve warm with whipped cream, ice cream, a dusting of powdered sugar, or fresh lemon slices for garnish.
Notes
- For a richer flavor, add a tablespoon of lemon zest to the batter.
