Description

These Lobster Tacos with Cilantro Lime Aioli are a delicious, light summer meal, featuring sweet lobster, refreshing mango salsa, and a zesty aioli. Perfectly balanced and full of flavor!


Ingredients

  • For the Mango Salsa:
  • 1 mango, peeled, seeded, and diced
  • ½ cup diced red bell pepper
  • ¼ cup minced red onion
  • 1 jalapeno, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 1 lime, juice and zest
  • For the Cilantro Lime Aioli:
  • ¼ cup fresh cilantro, rinsed and dried
  • 1 lime, juice and zest
  • ½ teaspoon ground cumin
  • 1 cup mayonnaise
  • 1 tablespoon minced garlic
  • ½ teaspoon ground cayenne
  • Pinch kosher salt and fresh ground pepper, to taste
  • For the Lobster Tacos:
  • 16 ounces cooked lobster meat, chopped
  • 2 teaspoons lime juice
  • 8 corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, combine the mango, bell pepper, red onion, jalapeno, cilantro, lime juice, and zest. Stir well to combine, cover, and refrigerate until ready to use.
  2. In a food processor, add the cilantro, lime juice, zest, cumin, mayonnaise, garlic, and cayenne. Process until smooth. Season with salt and pepper to taste.
  3. In a bowl, drizzle the lobster meat with lime juice and toss to coat evenly.
  4. Toast the tortillas for 20 seconds on a grill or gas range until slightly charred and softened, or heat according to package instructions.
  5. To assemble, place two tortillas on top of one another and add about 2 ounces of lobster meat in the center of each taco. Top with 2 tablespoons of mango salsa and drizzle with 1 tablespoon of cilantro lime aioli.
  6. Garnish with fresh cilantro and lime wedges. Serve immediately.

Notes

  • For added flavor, you can substitute the mango salsa with a pineapple salsa for a tropical twist.
  • If you prefer less heat, omit the jalapeno or reduce the amount used.
  • Serve with a side of chips or a light salad for a complete meal.
