Description
A bright and flavorful Lemon Feta Basil Rice that combines zesty lemon juice, creamy feta cheese, and fresh basil with fluffy cooked rice. This easy stovetop dish is perfect as a light side or a simple vegetarian main, delivering a refreshing Mediterranean-inspired taste in just 25 minutes.
Ingredients
Rice
- 3 cups cooked rice (or any cooked grain of your choice)
Dressing
- 2 tablespoons lemon juice (from one whole lemon)
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Add-ins
- ¾ cup feta cheese (crumbled)
- ⅓ cup fresh basil (hand torn or chiffonade)
Instructions
- Cook Rice: Prepare 3 cups of rice using your preferred cooking method until it is fully cooked and fluffy.
- Make Dressing: In a large bowl, whisk together 2 tablespoons of lemon juice, 1 tablespoon of olive oil, ¼ teaspoon salt, and ¼ teaspoon black pepper until well combined.
- Combine Rice and Dressing: Add the hot cooked rice to the bowl with the lemon dressing. Stir vigorously to mix and help break up any clumps of rice. If the lemon juice and olive oil have separated, whisk the dressing again before adding the rice.
- Add Feta Cheese: While the rice is still hot, add ¾ cup of crumbled feta cheese. Stir it through, using your fingers to crumble any larger chunks to evenly distribute the cheese. The heat will slightly melt the feta while keeping it chunky.
- Add Basil: Tear or thinly slice ⅓ cup of fresh basil leaves and sprinkle them over the rice. Toss gently to combine all ingredients evenly.
- Serve Warm: Serve the lemon feta basil rice warm as a side dish or light meal.
Notes
- Use freshly squeezed lemon juice for the best flavor.
- This recipe works well with any cooked grain such as quinoa, bulgur, or couscous as a substitute for rice.
- Adjust the salt and pepper to taste based on your preference and the saltiness of the feta.
- If desired, add other herbs like mint or parsley for extra freshness.
- Serve immediately for best flavor and texture.
