Description

LA Galbi is a popular Korean BBQ dish featuring tender beef short ribs marinated in a deliciously sweet and savory blend of ingredients. Perfect for grilling, family dinners, or potlucks, this dish is sure to impress!


Ingredients

  • pounds beef short ribs (thin cut)
  • 1-inch piece of ginger, peeled
  • 4 garlic cloves
  • ¼ cup soy sauce
  • ½ teaspoon salt
  • ½ tablespoon sugar
  • ½ Korean pear (or apple as a substitute)
  • ¼ white onion
  • ¼ cup water
  • ½ teaspoon black pepper
  • ½ tablespoon honey
  • 1 tablespoon vegetable or avocado oil (for grilling)
  • Optional Garnish: Green onions, Sesame seeds

Instructions

  1. Prepare the Beef: Remove the top membrane from the sliced beef short ribs. Wash the beef in cold water to remove any bone shards, then pat dry with a paper towel.
  2. Make the Marinade: In a food processor or blender, combine the ginger, garlic, soy sauce, salt, sugar, pear, white onion, water, black pepper, and honey. Blend until smooth.
  3. Marinate the Ribs: Pour the marinade over the beef short ribs and marinate for at least 2 hours or up to overnight in the refrigerator.
  4. Grill the Ribs: Take the ribs out of the refrigerator 30 minutes before grilling. Heat a cast iron pan or grill to medium-high heat. Once the pan is hot and smoking, add 1 tablespoon of oil. Gently add the marinated beef short ribs and cook for 2 minutes on each side, or until nicely browned.
  5. Garnish and Serve: Garnish with sesame seeds and sliced green onions if desired. Serve with hot rice, or make lettuce wraps with kimchi and spicy cucumber salad.

Notes

  • Substitutes: If you can’t find Korean pear, a regular apple works well to add a bit of sweetness and texture to the marinade.
  • Marinating Time: The longer the marination, the more flavorful the short ribs will be. Aim for at least 2 hours, but overnight is ideal for maximum flavor.
