Description

A delicious fusion recipe combining tender Korean BBQ beef with fragrant rice, vibrant herbs, spicy kimchi, and creamy yum yum sauce, all wrapped in a soft flour tortilla. Perfect for a flavorful and satisfying meal or easy make-ahead lunch option.

Ingredients

For the Korean BBQ Beef

  • 2 lbs. top sirloin, thinly sliced
  • 2 pears, peeled and cut into chunks
  • 2-inch knob of ginger
  • 4 cloves garlic
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil

For the Burritos

  • cooked rice, as needed
  • cilantro, minced, as desired
  • basil, minced, as desired
  • green onions, chopped, as desired
  • mint (optional), minced, as desired
  • kimchi, to taste
  • sriracha mayo or yum yum sauce, to taste
  • large flour tortillas

Instructions

  1. Prepare Korean BBQ Beef: Thinly slice the top sirloin and set aside. In a food processor, pulse the peeled pears, ginger knob, and garlic cloves until finely blended to create a smooth mixture that will act as a tenderizing marinade and flavor base.
  2. Combine Ingredients in Slow Cooker: Add the sliced beef, pear-ginger-garlic mixture, soy sauce, brown sugar, and sesame oil into the slow cooker. Stir to combine everything evenly and ensure the beef is well coated.
  3. Cook the Beef: Cover the slow cooker and cook on high heat for 3 to 5 hours. Cook until the beef is very tender and infused with the rich, sweet-savory flavors from the marinade.
  4. Prepare Burrito Fillings: While the beef is cooking, prepare the rice according to your preferred method. Mince cilantro, basil, green onions, and mint (if using). Have kimchi and sriracha mayo or yum yum sauce ready for assembly.
  5. Assemble Burritos: Lay a large flour tortilla flat on a piece of foil. Place a scoop of cooked rice in the center, then add a generous amount of the Korean BBQ beef on top. Sprinkle the minced herbs around the meat, add kimchi, and drizzle with sriracha mayo or yum yum sauce to taste.
  6. Wrap the Burritos: Fold the sides of the tortilla up over the filling, then roll it tightly from front to back to fully encase the fillings. Wrap the burrito in foil if saving for later or freezing. These can be enjoyed immediately or stored for convenient meals later.

Notes

  • The pears act as a natural tenderizer for the beef and add a slight sweetness to the marinade.
  • Feel free to adjust kimchi and sauce quantities to your preferred spice and flavor level.
  • Freezing wrapped burritos allows for quick reheating and easy meal prep.
  • Herbs like mint or basil add fresh layers of flavor but are optional based on your taste preferences.
  • Using a slow cooker ensures the beef is tender and infused with complex flavors with minimal hands-on time.
