Ingredients

Dough Ingredients

  • 3 cups all purpose flour, plus more for working the dough
  • 1 1/3 cups warm water
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 2 1/4 teaspoons active dry yeast

Mix-ins

  • 2/3 cup shredded cheddar cheese
  • 1/4 cup chopped jalapeno (see notes)


Instructions

  1. Mix Dough: In a large bowl, combine warm water, flour, yeast, sugar, and salt with a sturdy spatula. Mix until a shaggy dough forms with all flour incorporated.
  2. First Rise: Cover the bowl tightly with plastic wrap and place in a warm spot for 1 to 1.5 hours, until the dough has doubled in size.
  3. Add Cheese and Jalapenos: Once risen, remove plastic wrap and mix in the chopped jalapenos and most of the shredded cheddar cheese, reserving a little cheese for topping. Dump the dough onto a floured surface.
  4. Knead Dough: Using stretching and folding motions, knead the dough until cheese and jalapenos are fully incorporated and the dough forms a nice, smooth ball.
  5. Second Rise: Transfer the dough to a long piece of parchment paper, cover with a towel, and let it rise for about 20 minutes.
  6. Preheat Oven: Place your dutch oven with the lid on the top rack of the oven, then preheat to 450°F (232°C).
  7. Score Dough: Remove the towel from the dough and score it using a razor blade, usually a curved line on one side to allow steam to escape.
  8. Bake with Lid: Carefully transfer the parchment paper with the dough into the preheated dutch oven. Sprinkle reserved cheddar cheese on top, cover with the lid, and bake for 30 minutes.
  9. Bake without Lid: Remove the lid carefully and bake for an additional 10-15 minutes to develop a golden, crispy crust.
  10. Cool Bread: Remove the dutch oven from the oven and gently lift the bread with the parchment onto a wire rack to cool completely before slicing.

Notes

  • This recipe requires a dutch oven; baking on a tray or tin will not produce the same crust.
  • For a spicier loaf, add an additional 1/3 to 1/4 cup diced jalapenos.
  • If the dough has not doubled in size during the first rise, allow more time for proofing.
  • The bread will stay fresh for 3-4 days stored in an airtight container or bread tin.
