Description

Soft, buttery almond-flavored Italian wedding cookies with a tender crumb, dipped in a sweet almond glaze and topped with festive nonpareils—ideal for holidays, weddings, or any celebration.


Ingredients

  • 1/2 cup (1 stick) salted butter, softened and sliced
  • 1 1/4 cups powdered sugar
  • 3 large eggs, room temperature
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1 1/2 cups almond flour, spooned and leveled
  • 2 teaspoons baking powder
  • 2 teaspoons cornstarch
  • 3 cups powdered sugar (for glaze)
  • 1 teaspoon almond extract (for glaze)
  • 4 tablespoons milk, divided (for glaze)
  • Nonpareils, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or lightly spray with baking spray.
  2. In a large bowl, beat butter and powdered sugar until light and creamy.
  3. Add eggs and beat to combine (mixture may appear slightly lumpy).
  4. In a separate bowl, whisk together all-purpose flour, almond flour, baking powder, and cornstarch.
  5. Add dry ingredients to wet ingredients, mixing until a dough forms.
  6. Using a 1 1/2 tablespoon cookie scoop, portion dough, split each scoop in half, and roll into balls. Place 1 inch apart on baking sheets.
  7. Bake for 10–12 minutes, until edges are lightly golden and tops are dry and cracked. Cool completely before glazing.
  8. For the glaze, whisk powdered sugar, almond extract, and 3 tablespoons milk until smooth. Add remaining milk as needed for a thick but dippable consistency.
  9. Dip tops of cookies into glaze, place on a drying rack, and garnish with nonpareils if desired. Let set before serving.

Notes

  • For extra almond flavor, replace 1 tablespoon of milk in the glaze with amaretto liqueur.
  • Cookies can be stored in an airtight container for up to 1 week.
  • Glazed cookies should be fully set before stacking to avoid sticking.
