Ingredients
- 2 lbs boneless, skinless chicken breast
- ¾ cup olive oil
- ¼ cup red vinegar
- 1 tablespoon Italian garlic seasoning
- 1 tablespoon lemon juice
- ¾ teaspoon salt
- ½ teaspoon crushed red pepper flakes
- ½ teaspoon black pepper
Instructions
- Place chicken breasts between two sheets of parchment paper and pound to an even thickness using a meat mallet or rolling pin.
- In a large bowl or zip-top bag, combine olive oil, red vinegar, Italian garlic seasoning, lemon juice, salt, red pepper flakes, and black pepper. Mix well.
- Add the chicken to the marinade and turn to coat evenly.
- Cover the bowl or seal the bag, then refrigerate for at least 30 minutes and up to 12 hours.
- Preheat grill to 375°F (190°C). Brush grill grates with oil if necessary.
- Remove chicken from marinade and grill for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C). Discard any leftover marinade.
- Remove from grill and let rest under foil for 5 minutes before slicing. Serve and enjoy.
