Description

Ingredients

  • 2 lbs boneless, skinless chicken breast
  • ¾ cup olive oil
  • ¼ cup red vinegar
  • 1 tablespoon Italian garlic seasoning
  • 1 tablespoon lemon juice
  • ¾ teaspoon salt
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper

Instructions

  1. Place chicken breasts between two sheets of parchment paper and pound to an even thickness using a meat mallet or rolling pin.
  2. In a large bowl or zip-top bag, combine olive oil, red vinegar, Italian garlic seasoning, lemon juice, salt, red pepper flakes, and black pepper. Mix well.
  3. Add the chicken to the marinade and turn to coat evenly.
  4. Cover the bowl or seal the bag, then refrigerate for at least 30 minutes and up to 12 hours.
  5. Preheat grill to 375°F (190°C). Brush grill grates with oil if necessary.
  6. Remove chicken from marinade and grill for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C). Discard any leftover marinade.
  7. Remove from grill and let rest under foil for 5 minutes before slicing. Serve and enjoy.
