Ingredients
For the Rice
- 1 ½ cups jasmine rice, or basmati rice
- 2 Tablespoons refined coconut oil
- 2 ¼ cups water (use 1 ¾ cups for drier rice)
- 1 8-ounce can tomato sauce
- 1 teaspoon onion powder
Seasonings
- 1 ¼ teaspoon Himalayan pink salt
- 1 ½ teaspoons onion powder
- 1 teaspoon dried cilantro
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- ½ teaspoon paprika
Instructions
- Prepare Seasonings and Ingredients: Mix all the seasonings together in a small bowl and have all other ingredients measured and nearby for easy access.
- Sauté the Rice: Turn your Instant Pot to sauté mode and add the refined coconut oil. Once heated, add the rice along with 1 teaspoon of onion powder. Sauté the rice, stirring occasionally, until it begins to brown lightly to enhance flavor.
- Add Remaining Ingredients: Carefully mix in the remaining seasonings, tomato sauce, and water with the sautéed rice, stirring to combine everything evenly.
- Pressure Cook the Rice: Close the lid of the Instant Pot, set the valve to sealing, then press manual and set the timer for 10 minutes at high pressure.
- Natural Pressure Release: Once cooking is complete, allow the Instant Pot to naturally release pressure before opening the lid to prevent splattering and ensure perfectly cooked rice.
- Fluff and Serve: Open the lid carefully, fluff the rice gently with a fork to combine well, and serve as a flavorful side dish.
