Description

A quick and flavorful Instant Pot shrimp boil with sausage, potatoes, corn, and shrimp, all seasoned with Old Bay and topped with melted butter and fresh parsley.


Ingredients

  • 1.5 lbs baby red potatoes
  • 13 oz beef sausage (Cajun-style or smoked), cut into 2″ pieces
  • 3 medium ears of corn, halved
  • 1 cup chopped onion (or pearl onions, peeled)
  • 1½ cups chicken broth
  • 1 tbsp hot sauce (like cayenne pepper sauce)
  • 4 tsp Old Bay seasoning, divided
  • 2 lbs frozen extra-large shrimp (1315 per lb)
  • ¼ cup butter, melted
  • 1 tsp garlic powder
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Load the Instant Pot: Add potatoes, sausage, and corn to the Instant Pot liner. If you prefer soft onions, add them now. If you like more texture, add them later with the shrimp.
  2. Mix Broth & Seasonings: In a bowl, whisk together chicken broth, hot sauce, and 3 tsp of Old Bay seasoning. Pour this mixture over the ingredients in the pot.
  3. Pressure Cook – Step 1: Ensure the silicone ring is snug. Attach the lid, close the vent, and cook on HIGH pressure for 5 minutes. Quick release the pressure when time is up.
  4. Add Shrimp & Cook – Step 2: Quickly add in the frozen shrimp and onions (if not added earlier). Close the lid and cook on HIGH pressure for 1 minute. Quick release pressure again.
  5. Drain (Optional): Drain excess liquid if desired.
  6. Season & Serve: Pour everything into a large, rimmed tray. Mix melted butter with 1 tsp Old Bay seasoning and 1 tsp garlic powder. Drizzle over shrimp boil. Garnish with chopped parsley and serve with lemon wedges.

Notes

  • You can swap shrimp for crab or crawfish if preferred.
  • Adjust hot sauce to taste — more if you like it spicy!
  • Serve with crusty bread or over rice to make it a full meal.
