Description

This Instant Pot Keto Tuscan Soup with Turkey Sausage is a creamy, low-carb, and keto-friendly soup packed with lean turkey sausage, kale, and sun-dried tomatoes. Quick to prepare in the Instant Pot, this comforting soup is perfect for a healthy, hearty dinner with bold Italian flavors.


Ingredients

  • 1 lb (450g) hot turkey sausage, casings removed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ cup sun-dried tomatoes, drained and chopped
  • Salt and freshly ground black pepper, to taste
  • 6 cups low-sodium chicken broth
  • 1 bunch kale, leaves stripped and chopped
  • ¾ cup heavy whipping cream
  • ¼ cup freshly grated Parmesan cheese (optional)
  • Fresh chopped parsley, for serving

Instructions

  1. Set the Instant Pot to sauté mode. Add the turkey sausage and cook for 3–5 minutes, breaking it up until lightly browned. Drain excess fat if needed.
  2. Add garlic, onion, and oregano. Sauté for 2–3 minutes until onions are soft and translucent.
  3. Stir in chicken broth and sun-dried tomatoes. Season with black pepper to taste.
  4. Secure the lid and set to manual, cooking on high pressure for 5 minutes.
  5. Once done, use a quick release to release the pressure.
  6. Switch back to sauté mode and stir in chopped kale. Cook for 1–2 minutes until wilted.
  7. Stir in heavy cream and heat for about 1 minute. Adjust salt and pepper to taste.
  8. Serve hot, garnished with grated Parmesan and fresh parsley.

Notes

  • You can use regular turkey sausage if you prefer a milder flavor.
  • To make it dairy-free, omit the heavy cream and Parmesan, and substitute with coconut cream or almond milk.
  • Add more sun-dried tomatoes for a tangier flavor.
  • Store leftovers in the refrigerator for up to 3 days.
