Ingredients
- 1 cup butter, melted
- 2 cups packed light brown sugar
- 2 eggs, lightly beaten
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup chopped pecans
- 1 cup white chocolate chips
- ¾ cup toffee pieces
Instructions
- Preheat the oven to 375°F (190°C). Line a 9×13-inch pan with foil or parchment paper and spray with nonstick cooking spray.
- In a large bowl, mix the melted butter and brown sugar until well combined. Add the eggs and vanilla, and stir until smooth.
- Add the flour, baking powder, and salt, and mix just until combined.
- Fold in the chopped pecans, white chocolate chips, and toffee pieces.
- Spread the dough evenly into the prepared pan.
- Bake for about 35 minutes, or until the center is just set. Allow to cool completely in the pan.
- Once cooled, lift out the blondie by the paper and cut into squares. Serve topped with a scoop of ice cream and a drizzle of caramel.
Notes
- For an extra touch, drizzle more caramel sauce over the ice cream and blondie before serving.
- If you prefer a different nut, try swapping the pecans with walnuts or almonds.
