Description

Honey Mustard Potatoes are a quick, flavorful side dish that pairs perfectly with any main course. These tender baby potatoes are pan-seared and coated in a sweet and tangy honey mustard glaze. Ready in just 20 minutes, they’re a perfect vegetarian, gluten-free option for weeknight dinners or last-minute gatherings.

Ingredients

  • 1 lb mixed baby or fingerling potatoes
  • 2 tbsp olive oil
  • ¼ cup chicken broth
  • 1 tbsp honey
  • ¼ cup Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp fresh chopped chives, for garnish

Instructions

  1. Par-Boil the Potatoes:
Bring a pot of salted water to a boil. Add baby potatoes and par-boil until fork-tender, about 8–10 minutes. Drain well.
  2. Pan-Sear the Potatoes:
In a large skillet, heat 1 tablespoon olive oil over medium heat. Sauté the potatoes until the skin becomes golden and crispy. Remove and set aside.
  3. Make the Honey Mustard Glaze:
In the same skillet, add the remaining 1 tablespoon olive oil, Dijon mustard, honey, chicken broth, garlic powder, onion powder, oregano, paprika, salt, and pepper. Stir well and cook over medium-high heat until the sauce thickens and forms a sticky glaze, about 2–3 minutes.
  4. Coat the Potatoes:
Return the potatoes to the pan and toss to coat evenly with the honey mustard glaze.
  5. Garnish and Serve:
Garnish with chopped chives and serve hot.

Notes

  • Variations:
    • Swap baby potatoes with cubed Yukon Gold or red potatoes.
    • Add a splash of balsamic vinegar for a deeper tang.
    • Stir in a bit of whole grain mustard for extra texture.
    • Top with crumbled feta or goat cheese for a creamy contrast.
  • Make it vegan:
    • Replace chicken broth with vegetable broth.
  • Storage & Reheating:
    • Store leftovers in an airtight container in the refrigerator for up to 3 days.
    • Reheat in a skillet over medium heat or in the oven at 350°F until warmed through. Avoid microwaving to maintain crisp texture.
