Ingredients

  • For the Chicken:
  • 1 ½ lbs boneless, skinless chicken breast or thighs, chopped
  • 3 tbsp honey
  • Juice and zest of 2 limes
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt & pepper to taste
  • For the Wonton Tacos:
  • 24 square wonton wrappers
  • Oil for frying
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1 small tomato, diced
  • ¼ cup red onion, finely chopped
  • 2 tbsp cilantro, chopped
  • For the Avocado Crema:
  • ½ ripe avocado
  • ¼ cup sour cream or Greek yogurt
  • Juice of ½ lime
  • Salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, whisk together honey, lime juice, lime zest, garlic, chili powder, cumin, salt, and pepper. Add the chopped chicken and toss to coat. Marinate for 20-30 minutes in the fridge.
  2. Cook the Chicken: Heat a skillet over medium heat and cook the marinated chicken for 6-8 minutes until fully cooked and lightly caramelized. Set aside.
  3. Fry the Wonton Wrappers: Heat oil in a skillet or fryer to 350°F (175°C). Use tongs to fold each wonton wrapper into a taco shape, frying until golden brown (about 30-60 seconds). Drain on a paper towel.
  4. Make the Avocado Crema: In a blender, combine the avocado, sour cream (or Greek yogurt), lime juice, and a pinch of salt. Blend until smooth. Add water or lime juice if needed to adjust consistency.
  5. Assemble the Tacos: Fill each crispy wonton shell with honey lime chicken. Top with black beans, avocado, tomato, red onion, and cilantro. Drizzle with avocado crema and serve.

Notes

  • Variations: Add shredded cheese (cheddar, Mexican blend, or cotija) to the chicken before serving. For extra heat, add diced jalapeños or a splash of hot sauce. Swap the chicken for ground chicken or turkey, or replace it with tofu or extra beans for a vegetarian version. Try adding cilantro, basil, or smoked paprika to the crema for a different flavor profile.
  • Storage: Store the chicken and crema separately in airtight containers for up to 3 days. Assemble tacos just before serving to maintain the texture of the wonton shells.
  • Freezing: Freeze the cooked chicken for up to 2 months. Thaw before reheating. Fry wonton shells fresh for the best crunch.
