Description

Golden, crispy Homemade Tater Tots made from leftover mashed potatoes — crunchy on the outside and fluffy on the inside, just like your favorite diner-style side dish.


Ingredients

  • 3 cups leftover mashed potatoes, cold
  • 2 large eggs
  • 1/2 cup all-purpose flour (more if needed)
  • Salt, to taste
  • 1 cup panko bread crumbs
  • Neutral cooking oil, for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, eggs, and flour. Add salt to taste. Stir until well mixed.
  2. Place the panko bread crumbs in a separate bowl.
  3. Scoop about 1 tablespoon of the potato mixture into the breadcrumbs, coat it, and shape it into a tater tot using your hands. Repeat with the remaining mixture.
  4. Place the formed tots on a plate or baking sheet.
  5. Heat 1 inch of oil in a heavy-duty skillet over medium heat until it reaches 350ºF.
  6. Fry the tater tots in batches, turning often, for about 2–3 minutes or until golden brown.
  7. Remove to a paper towel-lined plate and sprinkle immediately with coarse salt.
  8. Serve hot with your favorite dipping sauce.
