Description
Golden, crispy Homemade Tater Tots made from leftover mashed potatoes — crunchy on the outside and fluffy on the inside, just like your favorite diner-style side dish.
Ingredients
- 3 cups leftover mashed potatoes, cold
- 2 large eggs
- 1/2 cup all-purpose flour (more if needed)
- Salt, to taste
- 1 cup panko bread crumbs
- Neutral cooking oil, for frying
Instructions
- In a large bowl, combine the mashed potatoes, eggs, and flour. Add salt to taste. Stir until well mixed.
- Place the panko bread crumbs in a separate bowl.
- Scoop about 1 tablespoon of the potato mixture into the breadcrumbs, coat it, and shape it into a tater tot using your hands. Repeat with the remaining mixture.
- Place the formed tots on a plate or baking sheet.
- Heat 1 inch of oil in a heavy-duty skillet over medium heat until it reaches 350ºF.
- Fry the tater tots in batches, turning often, for about 2–3 minutes or until golden brown.
- Remove to a paper towel-lined plate and sprinkle immediately with coarse salt.
- Serve hot with your favorite dipping sauce.

- Ensure mashed potatoes are cold for easier shaping.
- Add more flour if the mixture feels too loose.
- Try seasoning the panko with paprika or garlic powder for extra flavor.
