- 1 teaspoon Bagel Seasoning

- 3-4 tablespoons Lukewarm Water
Instructions
- Preheat Oven: Preheat your oven to 350 °F (180 °C) to prepare for baking the crackers.
- Select Flour: Ensure you use chickpea flour made from garbanzo beans, not besan flour, as the liquid ratios differ significantly.
- Prepare Dry Mix: In a mixing bowl, whisk the chickpea flour to break up any lumps, then mix in the bagel seasoning, cumin, and paprika evenly.
- Add Wet Ingredients: Add the olive oil and 3 tablespoons of lukewarm water to the dry mixture. Stir with a rubber spatula, and add an extra tablespoon of water if the dough feels too dry.
- Knead Dough: When stirring becomes difficult, lightly oil your hands and knead the mixture until a soft dough forms.
- Roll Dough: Place the dough between two pieces of lightly oiled parchment paper and roll it out into a 0.1-inch (2mm) thick rectangle using a rolling pin.
- Cut Crackers: Remove the top parchment paper and use a pizza cutter to cut the dough into square crackers.
- Arrange on Baking Sheet: Transfer the parchment paper with the cut dough onto a baking sheet, spreading the crackers slightly apart.
- Bake: Bake on the center rack at 350 °F (180 °C) for 12-14 minutes until the crackers are lightly golden and crispy. Note that they will firm up further as they cool.
