Ingredients
- ½ cup Greek yogurt
- ⅓ cup peanut butter
- ¼ cup honey or maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup oat flour
- ¼ cup chocolate chips
- ½ teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
- In a large bowl, whisk together Greek yogurt, peanut butter, honey (or maple syrup), egg, and vanilla extract until smooth.
- Stir in the oat flour, baking powder, and a pinch of salt until fully combined. Gently fold in the chocolate chips.
- Divide the batter evenly into the muffin cups, filling them about ¾ full.
- Bake for 18–22 minutes, or until the muffins are puffed, golden, and a toothpick inserted into the center comes out clean.
- Let the muffins cool slightly before serving.
Notes
- You can substitute peanut butter with almond butter or any other nut butter of your choice.
