Ingredients
Chocolate and Fat
- 35 g (0.25 cups) Dark chocolate – for melting
- 35 g Dark chocolate – chopped into small chunks; to mix in
- 2 tablespoon (0.25 cups) Coconut oil
Wet Ingredients
- 180 g (0.75 cups) 0% Fat Free Greek yogurt
- 1 Egg
- 60 ml (0.25 cups) Skim milk
- 1 teaspoon Vanilla paste
Dry Ingredients
- 50 g (0.5 cups) Oat flour – (use certified gluten free oats to ensure this recipe is gluten free)
- 20 g (0.25 cups) Cacao powder
- 120 g (0.5 cups) Granulated stevia
- 1 pinch Sea salt
- 0.5 teaspoon Baking powder
Instructions
- Preheat and Prepare Pan. Preheat your oven to 180°C (160°C fan)/350°F/Gas Mark 4 and line an 8×6 inch pan with parchment paper to prevent sticking.
- Melt Chocolate and Coconut Oil. Gently melt 35 g of dark chocolate together with 2 tablespoons of coconut oil over a double boiler or in short bursts in the microwave, then set aside to cool slightly.
- Mix Dry Ingredients. In a large mixing bowl, combine 50 g oat flour, 20 g cacao powder, a pinch of sea salt, 120 g granulated stevia, and 0.5 teaspoon baking powder. Stir well to evenly distribute all dry ingredients.
- Combine Wet Ingredients. In a separate bowl, whisk together 180 g 0% fat free Greek yogurt, 1 egg, 60 ml skim milk, and 1 teaspoon vanilla paste until smooth and well combined.
- Add Melted Chocolate to Wet Mixture. Pour the melted chocolate and coconut oil mixture into the wet ingredients and mix thoroughly to combine all elements evenly.
- Fold Wet Into Dry. Gradually fold the wet ingredient mixture into the dry mixture until just combined to create the brownie batter.
- Incorporate Chocolate Chunks. Fold in the 35 g chopped dark chocolate chunks to add texture and extra chocolate flavor throughout the brownies.
- Pour Batter and Add Topping. Transfer the batter into the prepared pan and sprinkle some additional chocolate chunks on top to enhance the chocolatey appeal.
- Bake the Brownies. Bake in the preheated oven for 30 to 35 minutes, checking doneness by inserting a knife or toothpick—you want it to come out mostly clean for a fudgy center.
- Cool Before Serving. Remove from oven and allow brownies to cool completely in the pan before cutting into squares to ensure neat slices and optimal texture.
