Description

These Healthy Blueberry Oatmeal Cookies are a deliciously wholesome treat perfect for breakfast or a snack. Made with ripe bananas, pure maple syrup, almond butter, rolled oats, and fresh blueberries, these cookies are naturally sweetened and packed with fiber and antioxidants. Baked to perfection with a soft, chewy texture and a hint of cinnamon, they are a nutritious choice that satisfies your sweet tooth without any guilt.

Ingredients

Wet Ingredients

  • 2 ripe bananas (mashed, about ⅔ cup)
  • ¼ cup pure maple syrup
  • ⅔ cup unsweetened almond butter

Dry Ingredients

  • 2 cups rolled oats
  • 1 ½ tsp ground cinnamon
  • 1 tsp sea salt

Add-ins

  • ⅔ cup fresh blueberries

Instructions

  1. Preheat the Oven: Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper to prepare for baking.
  2. Mash Bananas: In a large mixing bowl, mash the bananas until they are creamy, leaving a slightly chunky texture if preferred but aiming for an even consistency.
  3. Mix Wet Ingredients: Stir in the almond butter and pure maple syrup until fully combined and the mixture is thick and creamy. If your almond butter is cold, warm it slightly to make stirring easier.
  4. Add Dry Ingredients: Incorporate the rolled oats, ground cinnamon, and sea salt into the wet mixture, stirring well until fully combined. The dough will be very sticky and wet, which is normal.
  5. Fold in Blueberries: Gently fold the fresh blueberries into the dough using a rubber spatula, distributing them evenly throughout.
  6. Form Cookies: Drop mounds of dough onto the prepared baking sheet, shaping them as desired since they will retain their shape during baking.
  7. Bake: Place the baking sheet on the center rack of the preheated oven and bake the cookies for 10 to 15 minutes, or until they look set with slightly golden-brown edges. Large cookies typically take about 13 minutes.
  8. Cool: Remove the cookies from the oven and let them cool on the baking sheet for at least 15 minutes before transferring them using a spatula to prevent breaking.

Notes

  • If almond butter is refrigerated and hard, warm it in the microwave for 20-30 seconds to soften for easier mixing.
  • The cookie dough is sticky and wet; this is expected and results in a moist cookie.
  • Cookies maintain their shape during baking, so shape the dough carefully before baking if you prefer round cookies.
  • Allow cookies to cool completely before removing them to keep them intact.
