Ingredients

  • 2 cups flour

  • 20 oz can of crushed pineapple in juice (not drained)
  • ¼ cup shredded coconut, sweetened

Instructions

  2. In a large mixing bowl, beat the softened butter and sugar together on low speed using an electric mixer until the mixture becomes creamy.
  3. Add the eggs, one at a time, mixing gently after each addition.
  4. Slowly mix in the mashed banana and crushed pineapple until fully combined.
  5. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring just until everything is combined.
  7. Fold in the shredded coconut.
