Ingredients
Egg Mixture

Instructions
- Preparation: Whisk the eggs thoroughly with salt and pepper until the mixture is smooth and well combined. Add the chopped carrots and green onions and whisk again to evenly distribute the vegetables.
- Heating the pan: Place a 10-inch non-stick pan on low heat and add the neutral oil. Allow the oil to heat gently to prevent sticking and uneven cooking.
- First layer cooking: Pour about one-third of the egg mixture into the pan, spreading it evenly to cover the surface. As the edges start to set but the top is still slightly runny, carefully lift the edges all around with a spatula or rice paddle.
- Rolling the omelette: Begin rolling the cooked egg layer toward one side of the pan. When you reach the edge, gently pull the rolled omelette over and add another third of the egg mixture into the empty area.
- Filling gaps and second roll: Tilt the pan to help the egg fill in any gaps, especially at the tapered ends due to the round pan shape. Roll the omelette again and pull it gently back to one side, then add the final third of the egg mixture.
- Final roll and sealing: Repeat the tilting and rolling process until all egg mixture is used, ensuring the omelette is fully rolled and sealed. If the omelette ends on a short side, use a spatula and your hand to press and seal it properly on the pan.
- Resting and slicing: Transfer the rolled omelette onto a cool surface or plate and let it rest for a few minutes to firm up slightly. Then, slice into 6 to 8 even pieces. Remove any tapered edges made by tilting the pan and enjoy them as a tasty bite.
