Description
This easy-to-make Ground Beef Enchilada Casserole features layers of seasoned beef, melty cheese, corn tortillas, and rich red enchilada sauce. It’s a hearty, satisfying Tex-Mex meal the whole family will love!
Ingredients
- 2 pounds ground beef
- 1 onion, diced
- 1 ounce packet taco seasoning
- 4 oz can diced green chilis
- 3 cloves garlic, minced
- 2 (10.5 oz) cans red enchilada sauce
- 10 to 15 corn tortillas
- 2 cups shredded Colby Jack cheese
- 2 tablespoons chopped cilantro
Instructions
- Preheat the oven to 350°F (175°C) and spray a 9×13-inch casserole dish with cooking spray.
- In a large skillet, cook the ground beef and diced onions over medium heat until the beef is browned and the onions are tender. Drain the excess fat and return the beef mixture to the skillet.
- Stir in the taco seasoning, diced green chilis, and minced garlic. Cook for an additional 5 minutes to let the flavors blend.
- To assemble the casserole, pour about 1/3 cup of enchilada sauce into the bottom of the prepared casserole dish to coat the surface.
- Layer corn tortillas over the sauce (cutting them in half if necessary to fit). Top with half of the beef mixture, followed by 3/4 cup enchilada sauce and 1/2 cup shredded cheese.
- Repeat the layers: add more tortillas, the remaining beef mixture, 3/4 cup enchilada sauce (save a little for the top), and 1/2 cup shredded cheese.
- Top the casserole with a final layer of tortillas, the remaining enchilada sauce, and the remaining shredded cheese.
- Cover the casserole with aluminum foil and bake at 350°F for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, or until the casserole is bubbly and the cheese is melted.
- Remove from the oven and let the casserole rest for 5 minutes. Garnish with fresh cilantro before serving.
Notes
- For a spicier casserole, use a hot enchilada sauce or add jalapeños to the beef mixture.
- If you prefer a crispy top, uncover the casserole in the last 5 minutes of baking.
- Feel free to substitute the Colby Jack cheese with cheddar or a Mexican cheese blend.
- For a gluten-free option, use corn tortillas labeled gluten-free.
