Description

Ingredients
- 2 ears fresh corn
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 1 (4 oz) can chopped green chiles, drained
- 3 green onions, sliced
- 1/4 teaspoon cumin
- Salt to taste
Instructions
- Preheat grill to medium-high heat. Shuck and clean the corn.
- Grill the corn, turning occasionally, until evenly charred, about 15 minutes. Remove and let cool completely.
- Cut the kernels off the cobs and set aside.
- In a medium bowl, combine mayonnaise and sour cream until smooth.
- Stir in the cheddar, pepper jack, green chiles, green onions, and cumin.
- Fold in the grilled corn and mix until well combined.
- Season with salt to taste.
- Serve immediately with tortilla chips, corn chips, or crackers.
- Store leftovers in an airtight container in the refrigerator.
Notes
- You can use frozen or canned corn if fresh isn’t available—just roast it in a skillet for a smoky flavor.
- For extra heat, add diced jalapeños or a pinch of cayenne.
