Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) and line a small baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Dough: In a large mixing bowl, combine the Greek yogurt and self-rising flour. Mix thoroughly until the ingredients come together into a chunky dough.
  3. Knead Dough: Turn the dough onto a well-floured surface and knead it gently by hand for about 60 seconds until you form a smooth, round ball of dough.
  4. Shape Dough: Press the dough into a rectangle about 3/4 inch thick. Fold the top half of the dough down towards the center, then fold the bottom half up so the ends meet but do not overlap. Rotate the dough 90 degrees and repeat this folding process two more times, then press the dough back into a 3/4 inch thick rectangle.
  5. Cut Biscuits: Flour a biscuit cutter (about 2 and 3/4 inches in diameter) and press it firmly into the dough, avoiding twisting to prevent deflating the dough. Place the cut biscuits onto the prepared baking sheet close together so they touch, which helps them rise evenly.
  6. Add Topping: Lightly spray the biscuits with olive oil cooking spray or brush with melted butter. Sprinkle additional kosher salt on top if desired for enhanced flavor.
  7. Bake: Bake the biscuits in the preheated oven on the middle or top rack for 17 to 23 minutes until they puff up and turn golden brown. Use the middle rack for hotter ovens and the top rack for less hot ovens.
