Description

Rich, chewy, and delightfully nutty, these gooey butterscotch bars are layered with a buttery cookie crust, smooth caramel, crunchy nuts, and melty butterscotch chips. A quick semi-homemade dessert that tastes like pure comfort.


Ingredients

  • 1 sugar cookie mix (17.5 oz package)
  • 1 instant butterscotch pudding mix (3.4 oz package)
  • 1/2 cup butter, softened
  • 1 egg
  • 1 package caramels (14 oz)
  • 1/2 cup evaporated milk
  • 1 cup roasted macadamia nuts
  • 1 cup roasted cashews
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together sugar cookie mix, butterscotch pudding mix, butter, and egg until a dough forms.
  3. Press dough evenly into an ungreased 9×13-inch baking pan. Bake for 20–25 minutes, or until set.
  4. Meanwhile, in a saucepan over medium-low heat, melt the caramels with evaporated milk, stirring often until smooth.
  5. Remove from heat and stir in roasted macadamia nuts, cashews, and vanilla extract.
  6. Pour the caramel-nut mixture over the baked crust.
  7. Sprinkle butterscotch chips evenly on top. Let cool completely.
  8. Cut into bars and store in an airtight container.
