Ingredients
- 2 (8-ounce) packages of soba noodles
- 5 large garlic cloves, minced
- 1 tablespoon freshly grated ginger
- 1 tablespoon sesame oil
- 1/3 cup soy sauce
- 1/4 teaspoon chili paste (or to taste)
- A few stalks of yu choy (or green veggie of choice like broccolini or bok choy), chopped
- Green onions, sliced
- Sesame seeds, for garnish
Instructions
- Cook soba noodles according to package instructions. Drain and set aside.
- In a bowl, whisk together garlic, ginger, sesame oil, soy sauce, and chili paste.
- In a large pot or saucepan over medium heat, add yu choy or chosen vegetable and cook until slightly wilted.
- Add the cooked noodles, sauce mixture, and green onions to the pot. Stir and cook for about 1 minute until well combined and heated through.
- Serve topped with sesame seeds. Enjoy warm or cold.
Notes
- You can use any green veggie you have on hand—spinach, kale, or napa cabbage work well too.
- Adjust chili paste to taste if you prefer a milder or spicier dish.
- Use gluten-free soba noodles if necessary to keep the dish gluten-free.
