Description
A quick and easy dinner of juicy, golden-brown chicken thighs paired with tender mushrooms in a garlic butter sauce, all ready in just 30 minutes.
Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs (about 6 large thighs)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 2 tablespoons olive oil or coconut oil
- 8 ounces sliced mushrooms (cremini recommended)
- 3 tablespoons butter
- 4 cloves garlic, minced
Instructions
- In a small bowl, combine onion powder, garlic powder, paprika, salt, black pepper, and red pepper flakes.
- Pat the chicken thighs dry with a paper towel and evenly sprinkle the seasoning mix over the chicken.
- Heat oil in a 12-inch skillet over medium-high heat. Place the chicken thighs in the hot skillet and sear for about 7-8 minutes on each side, or until the internal temperature reaches 165°F (74°C) and juices run clear. Remove chicken from the skillet and keep warm.
- Add butter to the skillet, followed by the sliced mushrooms. Season with salt and pepper and sauté for about 3 minutes, or until the mushrooms are tender.
- Add the minced garlic and cook for about 1 more minute until fragrant.
- Return the chicken thighs to the skillet, allowing them to soak in the garlic butter sauce. Garnish with freshly chopped parsley and serve.
Notes
- Feel free to swap the mushrooms for your preferred variety, such as button or portobello mushrooms.
- Serve with your favorite side dish, like rice, mashed potatoes, or a fresh salad.
