Description

A quick and easy dinner of juicy, golden-brown chicken thighs paired with tender mushrooms in a garlic butter sauce, all ready in just 30 minutes.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs (about 6 large thighs)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons olive oil or coconut oil
  • 8 ounces sliced mushrooms (cremini recommended)
  • 3 tablespoons butter
  • 4 cloves garlic, minced

Instructions

  1. In a small bowl, combine onion powder, garlic powder, paprika, salt, black pepper, and red pepper flakes.
  2. Pat the chicken thighs dry with a paper towel and evenly sprinkle the seasoning mix over the chicken.
  3. Heat oil in a 12-inch skillet over medium-high heat. Place the chicken thighs in the hot skillet and sear for about 7-8 minutes on each side, or until the internal temperature reaches 165°F (74°C) and juices run clear. Remove chicken from the skillet and keep warm.
  4. Add butter to the skillet, followed by the sliced mushrooms. Season with salt and pepper and sauté for about 3 minutes, or until the mushrooms are tender.
  5. Add the minced garlic and cook for about 1 more minute until fragrant.
  6. Return the chicken thighs to the skillet, allowing them to soak in the garlic butter sauce. Garnish with freshly chopped parsley and serve.
