Ingredients
- 15.25 ounces Funfetti cake mix
- ½ cup sprinkles
- ½ teaspoon baking soda
- ⅓ cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- Additional sprinkles for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper or a baking mat.
- In a large stand mixer, combine the cake mix, sprinkles, and baking soda until just mixed.
- Add the sour cream, eggs, and vanilla extract. Mix until fully combined (about 1-2 minutes). The dough should be slightly thick.
- Drop dough by heaping tablespoons onto the prepared baking sheet, or use a 1-inch cookie scoop for more uniform cookies.
- Add additional sprinkles to the top of each cookie (optional).
- Bake for 9-12 minutes, or until the cookies are lightly golden on top and at the edges. The top of the cookies should not collapse when tapped.
- Let the cookies cool on the sheet for 2-3 minutes before transferring to a cooling rack.
- Serve warm or cooled.
