Description

These Frozen Yogurt Granola Cups are a healthy and satisfying dessert made with creamy Greek yogurt, a crunchy granola base, and topped with fresh berries. Perfect for a quick snack or a nutritious treat, these no-bake cups are customizable and easy to make, offering a refreshing combination of sweet and savory flavors.

Ingredients

  • ¾ cup oats
  • ½ tsp cinnamon
  • ¼ cup almond butter
  • 34 tbsp honey (adjust to desired sweetness)
  • 1 tsp vanilla extract
  • 1 ½ cups Greek yogurt* (see note)
  • Fresh berries of choice to top

Instructions

  1. In a bowl, mix together the oats, cinnamon, almond butter, honey, and vanilla extract until it forms a sticky dough. (If the dough is too dry, add more almond butter and honey to achieve the right consistency.)
  2. Line a muffin pan with muffin liners. Add a spoonful of the granola dough to the bottom of each muffin cup and press firmly with your fingers to form a sturdy base.
  3. Spoon a dollop of Greek yogurt onto each granola base. Top with fresh berries and any leftover granola for extra crunch.
  4. Place the muffin pan in the freezer to set for at least 4 hours. Allow the cups to thaw for a few minutes before serving.

Notes

  • Greek yogurt can be flavored or plain, depending on your preference. You can also use non-dairy yogurt alternatives for a dairy-free version.
  • If the mixture is too sticky to work with, try wetting your fingers before pressing the granola into the muffin cups.
